Beat breakfast boredom!
Variety is the spice of life – right? And a varied diet is the key to providing a range of nutrients, including vitamins, minerals and phytonutrients that contribute to a healthy, happy you! If you are tired of having the same breakfast every day, here are some ideas to break out of your morning rut. You might be surprised how making such a small change to your usual breakfast routine can change your outlook for the day and might even put a spring in your step!
Spice up your smoothie – Grind the seeds from 2 cardamon pods and blitz in a blender with ½ ripe mango, 75g natural yoghurt, ½ tbsp lime juice, ¼ tsp grated fresh root ginger and 2 chopped mint leaves. Whizz up until smooth and serve over ice. Yum!
Dreaming of summer – Summer porridge is a favourite. Mix 40g rolled oats with 100ml milk (any kind), ½ grated apple, a pinch of cinnamon, a small handful of berries and 1 tbsp nuts (any kind). Place in the fridge overnight, then enjoy a great start to the day!
Oh my omelette – jazz up this breakfast staple with some creative fillings :-
2 tbsp pesto and 5 halved cherry tomatoes
A handful of wilted kale and 25g goats cheese or feta
A few slices of avocado and a handful of wilted spinach
Super-quick yoghurt pot – Add your favourite fruit, nuts and seeds to 150ml natural or Greek yoghurt. Try 125g berries, 1 tbsp toasted flaked almonds and 1 tbsp milled flax seeds. Or 1 chopped apple with 1 tbsp walnuts and 1 tsp honey. Or go tropical with 1 tbsp of desiccated coconut, the pulp of a ½ passion fruit and ¼ chopped mango.
Tasty toasty toppings – forget butter and jam, get a little more adventurous…
Fry ½ clove garlic in a pan for a few seconds, then add 100g chestnut mushrooms and cook for 5 minutes. Add a squeeze of lemon juice and ½ tbsp chopped fresh parsley
Melt 10g butter in a pan and add 1 small, chopped leek and 1 chopped spring onion and sauté for 5 minutes until soft and slightly browned. Add 30g grated cheese, and grill the mixture spread on toast
Mash ½ avocado with 1 tsp lime juice and spread on toast. Top with a poached egg
Good old porridge – pimp up your porridge with these tasty combos :-
Banana, dates and walnuts
1 tsp cocoa and some banana slices
Stewed pear, plum and raisins
Go savoury with 25g goats cheese and 2 tbsp chopped chives
Healthy breakfast hash – Roast 1 small sweet potato, ½ red onion and 5 cherry tomatoes with a drizzle of olive oil and a sprinkle of paprika for 20 mins. Add to a bowl of wilted kale and ½ sliced avocado. Top with one or two poached eggs and enjoy!
